First, pick your jaw up off the floor, this is a new post. Second, I was attacked by an over scheduled calendar, three teens, and a hubby that was out of town for a week, so give me a break. Third, I missed blogging, reading what you post, and the wonderful camaraderie of the blogosphere. Fifth, instead of trying to catch you up on everything from the past few weeks in one massive post, I decided to start back with my regularly scheduled programming today and will slowly let you in on the highlights of my life in the next several daily posts - tomorrow I'll tell you all about my half-marathon I ran yesterday. So, without further ado, here is my typical Monday post:
I am maintaining my weight loss and have actually lost a few more since the last time I posted. I am now at a total weight loss of 79.2 pounds. I am trying not to loss anymore and in fact a small gain would be okay with me, but with the race training and trying to add points back into my Weight Watchers allowance (this is a bit frustrating), I haven't found the right balance yet.
The menu (Please note I now have a vegetarian in the house and I am doing my best to support that decision):
Saturday: Baked salmon, collard greens (never had them or cooked them and ICK), brown rice with black beans (added the black beans for a protein source for the veg)
Sunday: Went out to Red Robin to celebrate the race and daughter's weekend performances in her first professional opera production (more later in the week)
Monday: Eggplant Chana Masala (no idea what a chana masala is, but this recipe is vegetarian, actually vegan), watermelon, and crusty bread
Tuesday: Greek white beans, brown rice, broccoli
Wednesday: Hamburgers, turkey burgers, and Boca burgers with green beans
Thursday: Pasta bake and salad
Friday: Eggs, toast, and turkey sausage
I know I overdid it on the vegetarian meals, but I got a new cookbook and I love trying new recipes. More than likely we will settle into most meals being more along the lines of Saturday's with a meat option available, but that the other components still make a good meal on their own. Are you vegetarian or ever given it a try or have child(ren) that are? Any tips appreciated.

I want to come to your house for dinner :-) I am vegetarian. But in a house that has 16 other people that are not...I definitely don't cook special for me. Plus my domestic goddess skills for cooking (and enjoyment of it) are severely lacking :-) Kind of funny when I have been cooking for 16+ for 11 years!! At any rate, my vegetarian-meals are mostly the non-meat sides of what the others are eating, mixed with Boca burgers, etc. Know eating better is something I need to work on. BEST advice for your vegetarian--be careful to not become a "junk-food" vegetarian--says me whose favorite food is CHOCOLATE! Try a variety of vegetables. Tofu takes some getting used to--consistency more then taste. But give it a chance. I prefer the veggie-protein meats.
Ran a half marathon? That's what I'm talking about!
79.2 pounds in AMAZING! You should post before and after pics!
Congrats on your weight loss and half marathon!! Good for you!!!
Your menu sounds yummy!! I'll be interested to hear about the Greek beans!
When you get a chance, come visit me -- I'm doing a month of giveaways for my blog birthday!!
Have a great day!
I now have a vegetarian in the house too...but she doesn't like veggies. LOL
Pasta pasta pasta...
It is really good to "hear" from you again; I was getting a bit concerned about you. :)
Yay; you've lost almost 80 pounds, and your half marathon is now under your belt! You are amazing!
Good luck with the vegetarian in the house; hubby tried it VERY briefly and what I found was that it made all of us eat a little healthier, in the quest to up our vegetable intake.
Congrats on the half marathon!
We don't like vegetables all that much here so vegetarianism is never an issue, once they understand it means they have to eat vegetables, not just cookies and chips
I missed you! Welcome back! Awesome job on the half marathon...you rock it girl! Still trying to find my motivation...I don't know where it disappeared to...you inspire me though!
I am so glad you are back. I had missed you and wondered what was wrong. I have a vegetarian in my house too, so I 'll be watching your recipes with interest. BTW, I agree about the collard greens!

Sorry about all the extra comments. My computer froze and then just started popping out comments!
Glad to see you! Can't wait to hear about the opera!!!
You know, every time I have to cook meat of pretty much any type, I wish I was a vegetarian. Then I remember I don't like vegetables.
I have been an ovo lacto vegetarian for 22 years. I don't like to cook though so not much help there. Once in awhile I go through my cookbooks or make something from Vegetarian Times magazine. I don't like tofu and NEVER use it though. Ick. LOL The exception are the baked tofus which are considerably more firm and chewy but they are difficult to find. I prefer tempeh, seitan, or the meat substitutes from Morningstar Farms, Quorn, Boca, Gardein, etc. and others from the natural markets. We mostly make easy meals, pretty much what meateaters eat just minus the meat. Spaghetti with veggie meatballs, tacos, stews, etc.
I was a vegetarian for 7 hrs, stopped due to low iron (not balancing food right, early 2os and all) .... prefer veggie food to meat ... all of those sound really good.
