Monday Menu Mania

I had an awesome long run on Saturday. I officially ran half-marathon mileage! I ran 13.2 and a half-marathon is 13.1, so I was feeling good, if you don't count my knees and muscles.

The scale said I am down 3.6 pounds. This brings my total weight loss to 71.7 pounds.

This is another week from the scheduling nightmare files, so most dinners had to be something either quick and easy, crockpot, or easily made in the morning and then re-heated for dinner.

Saturday: Orange chicken, rice, and broccoli (yes, this was bumped from Friday) - I use Trader Joe's frozen orange chicken.

Sunday: Chicken and escarole saute with rice

Monday: Slow cooker turkey chowder

Tuesday: grilled cheese and melon

Wednesday: Beef and bean chili with corn bread

Thursday: spaghetti and some veggie

Friday: Lobster, asparagus, and scalloped potatoes (the kids are all gone and hubby and I will have a nice quiet evening at home - sooooo looking forward to it).

Congrats on the running! The half marathon will now seem so much easier, because you have already tackled the distance. The race itself is the reward for all the hard work you've already put in!!

Our menu is a little odd this week because of all the activities including a visit to the teens college of choice on Wed. It will be a looooong day so who knows what we will end up eating.

I have no idea what we're having this week...other than left over lasagne since I made a big pan of it tonight.

Your Friday menu sounds divine...and dinner alone?...I can only dream at this point, lol.
