Monday Menu Mania

Well, I ran my longest run thus far on Saturday. I did 11.4 miles in just over 2 hours. I am closing in on that 13.1 miles I need to do for the half-marathon the beginning of May. I have to say it felt good! I did pretty well with my food this week, except on Thursday I gave into some cookie cravings - oh well, I never thought I was perfect. The scale showed a 0.4 pound loss. I was happy with that since I did reach my goal weight a few weeks ago. I am now just shy of 5 pounds under my goal weight.

This week's menu was complicated by the beginning of rehearsals for my daughter. She is in the chorus of a professional opera production of Lucia di Lammermoor. This means I will basically not be home Tuesday nights and Wednesday nights mean a late dinner. Saturdays will be hampered as well. So wish me luck with meal planning here on out. Also, I must say thank you to my hubby as he will be picking up the slack at home with the boys those days.

Saturday: Chicken tortilla soup

Sunday: Baked fish with ratatouille

Monday: Classic beef and barley soup with rolls

Tuesday: Bean and cheese burritos

Wednesday: Turkey burgers and broccoli

Thursday: Pot roast, baked potatoes, and asparagus

Friday: Orange chicken, rice, and zucchini

Be forewarned, tomorrow is my wedding anniversary and the rest of the week might be slightly twitterpatted, as they say in Bambi.

So your comment about Curtis offering scholarships...you really are one who knows....How wonderful about your daughter! Where is this performance? When? Can you videotape it? Oh, gee, sorry, but I guess you can see where my heart is.
Congrats on the weight, the running, and planning dinners for a week. I keep saying I'm going to do that...

YAY! Go you! I signed up for another 5K -- it's all Winn's fault! Man. If you come here for the Princess Half next year, I'm going to have to sign up. What an amazing way to meet though!!!

OMG 11.4 miles in 2 hours.. gurl you rock. I am in May doing the bay to breakers , I am walking alright! LOL... it is a 12k in S.F. So pray I don't die trying it. LOL Last year I was only able to do half my feet hurt so bad I have flat feet, so buying better shoes and I am determined to finish this year :)

Wow!!! You are amazing with your running! Our daughters are running ...the oldest ran yesterday for one hour...the younger one ran 10 miles the other day, also conditioning for the half marathon.
(I will happily be the sideline cheerleader/picture taker).

Awesome job on the run!!! I'm feeling inspired to start running...eventually. I'm going to start out running/walking around my little village, then progress from there. I'm going shopping tomorrow for new crosstrainer shoes...my $12 Kmart shoes just don't cut it.
