Chicken Tortilla Soup Recipe

Some of you were interested in the recipe for Chicken Tortilla Soup and being that I have been at a loss for content lately, this seemed a great post - don't tell me otherwise, okay.

Here is the recipe and it comes from JoAnn at Homeschool Distractions.

I tweak it and add much more of the spices - at this point it is all eyeballed, but I would say I add at least 1 1/2 Tablespoons of the chili powder and probably 2 teaspoons of the cumin. I use store bought chips because I am lazy that way. My kids love this soup! Even my daughter, who won't eat the roasted chicken I make a couple of nights prior, gobbles this down - maybe that's the pound of cheese and the pile of chips speaking.

Enjoy!

We stumbled across Chicken Tortilla Soup a few months back, and now make it at least once a month. It is SO good, and very easy to make in the slow cooker! I put it in my cookblog. I'll have to go check out this recipe; thanks!

That sounds really good. Funny that you mention a loss for post ideas. I'm getting a bit of burnout too. Sometimes I have a tons of ideas, and sometimes nothing. Happy dieting!

i have been making this:

make meat for tacos, use ground turkey, add taco spice packet, what have you

i plunk some meat down on everybody's plate

then i add skim-milk taco cheese blend on top

then i add a dollop of low cal cream cheese

then i hand out the whole wheat tortilla chips

it's like a million little mini tacos and my son LOVES IT

he has asked for it for like 3 nights in a row

i am doing better with my eating and even a few people have said i looked thinner.

my strategy? i eat from a salad plate.

This one sounds yummy. My husband used to have an office in Mexico City and when I would go down there with him we would always go to this hole in the wall restaurant that had the most astonishing soup.

I've never had it quite as good but I'm always trying!

Oh yummy! Thanks for sharing this! I love tortilla soup and agree...the cheese and pile of chips are definitely the "icing on the top".

Blessings & Aloha!
(Hope you have a wonderful week dear friend! Thank you for stopping by...I love to find your comments) Our son and his buddies left yesterday to drive back to KY for college...so much fun having a houseful of these guys! It always seems soooo quiet and empty again.... )

I love the tortilla soup at Chili's but its loaded with fat. I got a great recipe for tortilla soup from TJs Test Kitchen. The soup was delish and I was surprised that one of the ingredients was pumpkin! I will be sure to give this recipe a try. Thanks for sharing.
