Monday Menu Mania

Okay, so I wasn't able to run this entire week or really exercise because of my knee. Remember my klutzy alter-ego fell while running last Monday? I stayed within my Weight Watcher point allotment and really hoped that would mean not gaining anything. Still, the scale was scary to even think about this morning. I'm happy to report that I lost 1.4 pounds, bringing my total to 54.8 pounds lost. I have 8.4 pounds to go until my goal.

Here is the menu, which is less than stellar and I will explain why:

Saturday: whatever (probably a wrap or salad) - hubby and the boys are still out camping leaving just me and my dear daughter

Sunday: repeat of yesterday

Monday: Orange chicken, rice, and broccoli (I like making something the boys wouldn't have camping and I know everyone will enjoy on the first night back). Oh by make, I mean open a bag or two of Trader Joe's frozen orange chicken. I don't do that often, so it really is okay.

Tuesday: Slow Cook Tuscan Sausage and bean soup

Wednesday: Spaghetti and a veggie (teen friends coming to dinner - simple with high appeal a must)

Thursday: Meat loaf, herbed brown rice, and green beans

Friday: Roasted chicken, potato, and carrots

So, do you have any frozen meals you make on occasion because everyone loves them and they are easy?

Hmm...hubs loves chicken pot pie so I always try to make some to keep in the freezer for him. Your menus sound yummy; I'm with the commenters above!

YES! We go to church on Saturday evenings, so we throw a frozen pasta dinner in the microwave/oven when the troops come home demaciated from having to wait an additional half an hour for dinner. Sam's Club has a great variety.

I keep cups of a thick beef & sausage ragu in the freezer. I can heat it up quickly for serving over any pasta.

I try to make lots of chicken dishes to keep in the freezer and throw together on the spur of the moment.

We eat a lot of frozen stuff when band is in full swing b/c so many nights are busy. I always have frozen pizzas and chicken tenders on hand. Plus I try to freeze other meals in bulk so they are quick but homemade.

I actually really like TJ's orange chicken. It's pretty good. What I do, is whenever I cook, I make a lot extra and freeze it. Like meatballs or some sort of chicken. It works out well because I really end up cooking every other week.
