Monday Menu Mania

I stayed on track with my points this week and I ran 30 miles this week. So, what did the scale have to say this morning? Another 2.8 pounds lost! This brings my total lost to 53.4 pounds with 9.8 pounds to go until I reach my goal.

Menu Time:

Saturday: London broil, baked potato, and broccoli

Sunday: Ginger shrimp and green bean stir-fry with rice

Monday: Minestrone

Tuesday: Provencal chicken strips and veggies

Wednesday: Hamburger or turkey burger with fresh fruit

Thursday: El Pollo Loco chicken (fast-food grilled Mexican chicken)

Friday: Not sure. At this point it is just my daughter and I home for dinner, so I am sure we can whip something up on the spur of the moment.

What do you like to make as a spur of the moment, easy dinner? Give me some ideas. I happen to love to open a can of chili and serve over rice with cheddar cheese on top, but that is totally too many points for this Weight Watcher gal.

My fav spur of the moment meal is Curry chicken over brown rice. I try to make sure I have the ingredients in my pantry at all times. :)

For spur of the moment I usually broil something like salmon or steak. I keep some vacuum sealed single serving fish pieces in the freezer and then serve it over a salad with a vinaigrette.

Our spur of the moment is usually The Husband grabbing some chicken at Wal-Mart from their deli (the chicken finger types), and I make corn and mashed potatoes at home. Then he puts 'em all together and adds cheese on top. I don't know how many calories that is... And I don't think I want to! But I love it, and it's really quick and easy!

I just bought the new WW cookbook, I will look and see if they have some good quick meals and let you know.

You go girl!!!! 30 Miles! I am so impressed! ...2.8 pounds! You are almost to your goal. Woohoo!

Have you ever checked out the "Cooking Light" magazine, they have the best quick recipes. I have several I go to from there. And they are practically impossible to screw up!

I think I am going to print out your menu and just use it for my menu...then I won't have to think at all. No excuses for me not to do it. WOW this might really work for me. Better stuff my face today (I think it is going to be my last chance now)

Congrats on the miles and the weight loss! I hope to get three miles in today. On Sunday I cooked Salsa chicken. I took 5 skinless bonless chicken breasts and sprinkled them with taco seasoning (both sides). I put them in a 13x9 pan and covered them in salsa. I baked for 35 min at 375. Then I covered the tops of them in shredded mexican cheese (the four cheese kind - not the taco flavor cheese) and baked 5 more minutes. It was delicious and so easy!

How about grilled chicken with roasted veggies (eggplant, red peppers, onion and fennel tossed with alittle garlic and olive oil?) and a salad? Could have a tiny mount of couscous... That was my lunch today...

Great job with the weight loss. When do you find out if you made the Amazing Race? I was telling my family about this, and my daughter said, "If she makes it, you're going to make us watch the show, aren't you?" : )

The ginger shrimp sounds SOOOO good... got any leftovers for me?

Sorry to hear you hurt yourself running-- that's why I am a couch potato (these days at least; amazing how a little cold will knock me on my back). I feel like a klutz ALL the time, too!
