Monday Menu Mania & Cute As A Bunny Challenge


Let's start with the Cute As A Bunny Challenge being hosted by Me So Hongry. My mini-challenge this week was to do my ab workout three times during the week - DID IT! My challenge for this week will be to do Jillian Michael's 30 Day Shred three times and keep the ab workout at three times. I had my longest run to date on Saturday, 10.1 miles, at 11:23 per mile. I was happy with that for sure. This morning the scale showed a loss of 1.4 pounds. This brings my total to 60.4 pounds with just 2.8 pounds to go.

Onto the menu:

Saturday: BBQ shredded pork, corn bread, and green beans (this was so tasty and in the crockpot, so way easy). I kept my meat portion to 2 ounces which made the points doable. I skipped the corn bread and had a whole wheat Orowheat Sandwich thin and made a BBQ pork sandwich. The green beans were yummy too.

Sunday: Southwestern salmon with peppers and brown rice.

Monday: Chili beans and corn over baked potato

Tuesday: Eggs, turkey sausage, and toast (we love breakfast for supper).

Wednesday: Whole wheat spaghetti and a side of broccoli

Thursday: El Pollo Loco chicken (Mexican grilled fast-food chicken) - my dad bring sit every other week for dinner. He was supposed to bring it last week, but had to cancel, so he gets to do it this week.

Friday: Steak fajitas, rice, and refried beans.

Um, nothing. I don't have any idea. Except I don't plan to cook much. I hate cooking!

I haven't even begun to plan my menu yet. I had thought of quiche one night and my son is already complaining.

I know I'm making a frittata tomorrow and doing steak & pierogis one night. But I'm still uncertain about the other nights. I'm thinking a ginger carrot soup but the little boys might have large issues with it

Tonight is pork chops & bowties with broccoli but the rest of the week is undecided.

Actually I was going to brainstorm on it today but work has been BUSY!

I love breakfast for dinner too. It's so easy but one of fav quick dinners.

I'm with the "I haven't even begun to plan for the week yet" set...
and, in my defense, Lil Bits eats very little of what I like, dinner for hubs may be 8 A.M. and, well, I wish it were easy...

Anything that can be 1) thrown together at the last minute but is still healthy; 2) thrown in the slow-cooker (Puerto Rican style) 3) thrown together with rice in the rice cooker (Again, PRican style). Being a single-mom stinks.

I must say, I'm a wee bit proud of myself for making sure that I have chicken in the freezer as well as a lasagna to make for dinner tonight.

It totally negates the fact that I ate three cupcakes yesterday.

I've got my bag packed for the pool tomorrow morning and am all prepared for healthy meals this week.

That's good time for 10 miles! Congrats on your weight loss too that is awesome!! The BBQ Pork sounds so good. I haven't had that in a long time. I was going to sit down and figure out my menu plan but I got to sidetracked today.

Mon: eat & run night! Tues: falafels (the kids will eat mac & cheese!) Wed: turkey, carrots & potatoes Thurs: thai chicken wraps w/ brown rice, peppers & onion Fri: Pork chops and salad...
That is the plan! =) I am excited for you with your weight loss goals!~! I need to get back into doing abs... I will join this week!

Woo hoo! Way to go :D That's a long run and a great time. And 60 lbs, wow!~ You rock!

BTW- your menu sounds so yummy. I love BBQ sandwichs and fajitas.

WOW!!! 10 miles @ a pace of 11:23, that's awesome! I hope my speed and endurance comes in time. Do you have any running tips in regards to form and breathing?

Congrats on meeting your challenge mini-goal and losing as well. And losing 60 pounds...how motivating for your blog readers.

Where do you get most of your recipes from? Your menu sounds scrumptious.
