This is the first Monday Menu of the new year!!!
First, the weigh-in. This morning this scale showed a 3.2 pound loss! That brings my total to an even 46 pounds. 17.2 pounds to go until my goal weight.
Now the main attraction, what's for dinner?
Saturday: Roasted chicken, potatoes, and carrots
Sunday: Poached salmon and cucumbers with a side of green beans
Monday: Chicken tortilla soup
Tuesday: Meatloaf and zucchini
Wednesday: Capellini with fresh tomato sauce
Thursday: Bean and cheese burritos (Daughter has a performance, so I had to squeeze something in between carpool and the show)
Friday: Roast pork puertorriqueno, broccoli, and rice
As you know, I plan out our meals every week. I try to stick to it, but being human and having a hubby and three kids means that most weeks one of the meals gets bumped or replaced altogether. I can go with the flow when that happens. Four of this week's meals come straight from my Weight Watcher's cookbook and two of the meals will be first time tries.

I *really* need to do a menu each week, because I am (7 years into marriage and around 6 as a SAHM) *still* learning the whole cooking thing. I am still very meat and potatoes, but maybe I can get some ideas here too! :-)

Now that I am working out of the house full time...that seems so much harder to do! I was a SAHM for 26+ years! Gee-whiz! i really need to think about planning for the week, even though it is jsut my hubby and I now, since ours are all in college.
We are trying to eat more organic.
