Monday Menu and Weigh-In

I had a wonderful Christmas and partook of many wonderful epicurean delights. I hope you did too. So, this morning I was a little wary of the scale. What I saw made me very happy though. I lost 2.6 pounds bringing my total to 42.8 pounds. I have 20.4 pounds to go.

I wanted to share that I reached one of my exercising goals, to jog 5 miles in an hour. I did it Saturday!!!

Here is this week's menu:

Saturday: It was supposed to be salmon, but we decided to go to Avatar and that made for a late dinner and mom not wanting to cook, so it was leftovers. I'll blog about Avatar later this week.

Sunday: Ham and bean soup made by my loving hubby with the leftover Christmas ham.

Monday: Whole wheat spaghetti and tomato sauce with a side of broccoli

Tuesday: Chicken escarole saute and rice (I did make this last week for my family and it was super good and I really thought my dad would like it and he is coming to dinner tonight)

Wednesday: Pot roast with potatoes and carrots

Thursday: Turkey burgers and fruit (I think it may only be hubby, myself, and the youngest home as the teens seem to be invited elsewhere for New Year's - the girl teen for sure, the boy teen is a maybe).

Friday: Honey mustard pork chops with noodles and green beans

I hope you all had a beautiful and heartwarming Christmas weekend. What's on your menus this week?
