I'm back! Well, I really didn't go anywhere, but my hubby was home Wednesday-Sunday and I find it very difficult to hangout in the blogosphere when he is home. I hope you all had an awesome Thanksgiving. Now onto the weigh-in. My goal this week was to maintain, what with Thanksgiving and all that entails. So, when I stepped on the scale I was very happy to see another 2.8 pounds lost. This brings my total weight loss to 34.2 pounds. I have 29 pounds to go until I am at my goal weight.
This week's menu:
Saturday: Bean soup with the leftover ham bone (I brought a ham to my in-laws Thanksgiving dinner, so it was great to use it for soup.) - Actually, this is one of my hubby's recipes and he is the one that makes it - even better, huh?
Sunday: Ginger shrimp and green bean stir fry with rice
Monday: Leek and Golden Potato Soup (new recipe)
Tuesday: Spaghetti and oven roasted tomato sauce
Wednesday: Steak, broccoli, and baked potato
Thursday: My dad and step-mom are coming to dinner and bringing El Pollo Loco (Mexican grilled chicken)
Friday: I think we are going out to eat - love it!
I have to admit that I have never cooked with leeks before. I'm hoping the soup turns out well because it sounds delicious. Do you get intimidated when using a new ingredient? I'm feeling a little timid about it, but this cookbook has had almost all hits so far, so I have faith that the recipe should work out.

Oh my gosh, you lost 2.8 pounds over the holidays!! Wow! About the leeks, they are fabulous, just make sure you wash them well, sometime they have sand in between the tight stalks and leek and potato is one of my favorites, easy to make too!

Wow! I have not been keeping up with how you have been doing with the weight loss, I am so very impressed. I know how difficult it can be through the holidays but it sounds like you have it all planned out. Keep up the good work you must feel just fantastic.

I actually just tried cooking shrimp for the first time last week (I know, super easy, but I was nervous). Your menu sounds so super delicious!

I like leeks. I use them a lot because I don't like onions. Weird I know. Creamy leek & potato soup is one of my winter faves

How did the leeks go? I have a whole garden full of them and use them all the time. The key is making sure that you wash them really well because there are little bits of grit stuck in them and can be very unpleasant to eat. I always slice them fairly thinly, and then put in a bowl of water and drain. Well done on the diet over Thanksgiving!
