Monday Menu Time

Can you believe it is Monday again, already?! I know I cannot. Monday of course means weigh-in here, so right to it. Today the scale said I had lost 5.4 pounds - I was stunned. That brings my total to 30.2 pounds!

Before I post the menu, I wanted to let you all know that 95% of what I post is actually a Weight Watcher recipe. If I am making something that is not Weight Watchers or low cal/fat on its own, then I will usually eat leftovers or a salad. Now, onto the main event.

Saturday: Poached salmon and cucumber - this was a big hit with hubby a couple of weeks ago and he wanted me to make it again, so I did - YUM!

Sunday: Oven fried chicken and broccoli - I made this a couple of weeks ago too, but the two older kids were not home, so I would like their opinion. I was encouraged because my youngest one did like it and he is usually the pickiest one.

Monday: Refried bean soup - my online weight loss buddy, Connie (big wave), told me this was a good soup, so I am giving it a try.

Tuesday: Rosemary chicken with wild rice and cauliflower - although I used wild rice on the poached salmon dish and hubby liked it with white rice better, I may change it to white rice - I happen to love brown rice and like wild rice, but I have to cook for the whole family.

Wednesday: Meatloaf, baked potato, and green beans

Thursday: Spaghetti with oven roasted tomato sauce

Friday: Up in the air at the moment, partly because I am not sure who will be here for dinner and who will not.

I just love when the cooler weather hits, and it finally has here, and I get to enjoy soup/stew. I think soup/stew is my favorite thing because it is warm, comfort-food, and best of all can be made ahead of time and reheated - with the kids' busy schedule this is a big plus. What is your favorite cool weather meal?

Soup is my favorite food, though I am not too sure about refried bean.. let us know how it turns out

Wow!! Congratulations, you go!! I love the cooler weather too. My favorite cool weather meal would probably be my homemade vegetable beef soup. I make up a huge pot that almost makes it a week. I say almost because I usually eat it for lunch and dinner and sometimes as a snack. :)

Wow! Great weight loss this week and over all. I love the menus. How do you keep portion control in control???? Seriously. Any ideas?
