Oh wait, it's Monday, so that means weigh-in and menu planning. Sorry, no Time Warp today, maybe another time.
Was the scale my friend this morning? Yes, with 1.6 pounds lost. That brings my total to 24.8 pounds.
Just a note about last week's menu, the Tamale Pie was an "epic fail" as my kids would say. The meat mixture was tasty, in my opinion, but the cornmeal on top was ick! The Greek soup was really tasty - it was made with white rice, chicken, and spinach. I really liked it and have decided to make a batch for lunches this week with some tweaking - brown rice, no chicken, but chickpeas instead. Okay, onto the main event:
Sunday: Linguine Alfredo - it needed more garlic and I really don't care for linguine noodles and I discovered neither do the kids, so next time I will make it with spaghetti noodles. It was nice because there were veggies right in the dish.
Saturday: Shrimp Scampi, rice, and broccoli. This was a hit. I could probably cook shrimp in dirty bath water and they would love it though.
Monday: Beef and barley soup with rolls
Tuesday: Greek roast chicken, potato, and carrots
Wednesday: bean and cheese burritos (easy night)
Thursday: My Dad comes for dinner and is bringing El Pollo Loco (Mexican grilled chicken)
Friday: Chicken tortilla soup

As usual, your menus sound yummy. I do the same thing over and over, so it would be nice to try new things!

I tried a recipe with a boiling stew and a dumpling topping which was horrid! I normally like chicken and dumplings but the one I tried was more of a corn dumpling and bean recipe. Just awful.
We had jerusalem artichoke soup (explosive), spaghetti and meatballs (always a hit) and cottage pie (old standby). Well done on the diet.

Your menus look amazingly good to be losing weight on! How?? Girl, you must share! Very proud of you for losing 24 pounds. That is such an accomplishment. My plan is simple, no sugar, no white flour. Tell me more about yours.
