Recipe Swap 7/13/09

I had so much fun making the rounds last week and getting some yummy new recipes I thought I would join in again. You can too, just go to Our Chaotic Life and join the fun.

I stole this recipe from I'm Not Your Average Soccer Mom who got it from a friend. Her blog post called them preacher cookies. When I served them to a friend and called them preacher cookies, she took one look and said they were not preacher cookies, but cat sh*t cookies - she said that's what they always called them, so depending on your crowd of friends, you can call them anything you like.

This is a quick recipe. I always have these items on hand. No oven to heat the house up in the summer.

1/2 cup butter
4 tablespoons unsweetened cocoa powder
2 cups sugar
1/2 cup milk
1/8 teaspoon salt
3 cups quick cooking oats - I usually only have regular oats, so I use those and it works fine.
1/2 cup peanut butter (smooth or crunchy)- we decided smooth was best
1 teaspoon vanilla extract
Melt butter in a saucepan over medium heat.
Add the cocoa powder, sugar and milk to the melted butter. Bring to a boil for 1 minute. Remove from heat.

Add vanilla salt and pb. Stir until pb is combined. Add oats.
Drop by spoonfuls on wax paper. Let cool - they will firm up as they cool.

I usually hear them called No Bake Cookies. Scott loves them but no one else in the house cares for them. I sometimes have trouble getting them to firm up...I think it is the slight humidity we have here.

I love these! And for some odd reason I never make them during the summer when I SHOULD be making them. Duh.

I know they are called lots of things, but I'd rather not eat anything called catshit. Just sayin'...

Nice, I've been looking at no bake cookies now that it is hot. I don't like trying recipes online (although I do) unless I "know" someone who has tried them.
